Holiday Potato Cakes

Another recipe for those Thanksgiving leftovers.


3/4 cup cold mashed potato
1/2 cup stuffing
1/2 cup turkey or chicken diced
Pepper
1 tsp butter
1 tbsp olive oil.

Mix potato, stuffing, meat and a grind of pepper in a bowl. Form four patties approx 3-4 inches in diameter and about 1/2 thick. Heat oil and butter in medium skillet on medium heat until butter starts to foam. Pan fry the patties on one side for about four or five minutes on each side or until nice and brown.

Serve with heated up gravy and a little cranberry sauce.

Black Friday Hash

A quick and easy way to help use up all those leftovers.



2 medium russet potatoes, cut into approx 1/2 cubes
1 cup leftover stuffing
1 cup leftover turkey, pulled into large chunks
1 tbp olive oil
1 tsp butter
Dash of salt
Grind of fresh pepper
Two eggs poached
Cranberry sauce

Heat the olive oil and butter in a medium skillet on medium-high heat. Add the potatoes and brown, turning every five minutes or so until done. Salt lightly. Turn off heat and add the leftover stuffing and turkey meat to heat through.

Plate and top with a poach egg and garnish with leftover cranberry sauce. Add a grind of pepper. Serve with leftover gravy on the side for those who want it.
