Breakfast Sandwiches

Here are two quick and easy breakfast sandwiches that can be served up in a hurry and eaten on the run. There is almost no end to the variations that can be done. Here's a couple suggestions.

Egg and Sausage Sandwich

2 Sausage patties
2 English muffins
2 Eggs
Cheddar Cheese
Butter
Salt
Pepper

Prepare the two sausage patties. Heat a pat of butter in a non-stick skillet on medium-low heat. Whisk the eggs with a fork and pour into the skillet. Spread egg evenly by tilting the pan. Add salt and pepper. While the egg is cooking, split and toast the muffins.

When the egg is beginning to just setting up on top and just a little runny, carefully fold both ends of the omelet so it is about the width of the muffin. With a spatula slice the omelet into two equal halves. Continue to cook until egg is set.

Place the sausage on the muffin, top each with one half the omelet and add a slice of cheese and go.

Ham and Egg Sandwich

Thin sliced Deli Ham
2 slices Swiss Cheese sliced thin
2 eggs
4 slices sourdough bread
Butter
Salt and Pepper

Pre-heat oven to 425. Heat a little butter in a non-stick skillet, whisk the eggs and scramble on medium-low. Add salt and pepper. Toast the bread and butter lightly.

When the eggs are just set, top the toast with the scrambled egg, sliced ham and the swiss. Place the bottom half of the sandwich in the preheated oven and cook for a couple minutes until the cheese is beginning to melt and the ham is heated through and remove and top with the other piece of toast.
